I am also an educator who is just beginning to learn more about wikis and how they can be used.  

There are a lot of sites that offer wiki services for free.  The only catch is the advertisements that appear on your site, but they still serve the purpose.

I have listed a few links below to get you started.  The first link to wikispaces is for teachers and they are offering free pages for teachers with no advertisements.  Try them out and let me know what you think.
